Apple Cheese or Membrillo Spiced apple cheese

This fruit cheese is an excellent way to complement a Camembert or Brie though it’s rather nice served in small slices with roast pork.
You need:

1kg (2lb) apples
juice of 2 lemons
1/2 teaspoon cinnamon
1/2 a teaspoon of allspice
1/2 a teaspoon of dried cloves
sugar
1 cup of water

German Apple Butter

4 pounds apples
1 1/2 cups apple cider
2 lemons juiced
1/2 water
1/2 white sugar
1/2 brown sugar

(optional)

1/2 tablespoon ground cinnamon
1 teaspoon ground cloves
1 teaspoon ground nutmeg
